Paul West is an Australian chef and the host of River Cottage Australia, the first international franchise of the hugely successful River Cottage series. Having worked in all areas of food production – from a volunteer organic fruit retailer to a bistro chef in one of Australia’s top restaurants, Vue de Monde – Paul has come to embrace the philosophy of simple and honest cooking and sustainable living. Paul was born in the small town of Murrurundi in the province of New South Wales in 1984. His love for food was ignited in his early 20s when he participated in the Willing Workers on Organic Farms (WWOOF) program, which offers travellers to opportunity work in farms in exchange for accommodation.
After participating in the WWOOF program and working in community gardens, Paul began his kitchen career as a dishwasher. Having served his first apprenticeship at the age of 23, Paul continued working his way up in the kitchen and eventually got a job as a bistro chef in Melbourne’s prestigious Vue de Monde restaurant.
In 2012, thirsty for a change and hoping to lead a more sustainable life, Paul moved to the Hobart region and worked as a ‘knife for hire’ in various restaurant kitchens. It was during one of the night shifts that he received the call telling him that he had won out over more than 1,000 applicants to become the host of River Cottage Australia.
Paul currently resides in the River Cottage in Central Tilba, Australia with his girlfriend Alicia and border collie cross, Digger.
