Chicken in Tomato Sauce
Tender and juicy chicken, coated in a well-seasoned, aromatic red tomato sauce.
Let's start cooking!
Step 1 - Blend rempah (spice paste)
- In a blender, blend shallots, large red chilies, ginger and garlic until smooth.
- If mixture is too dry, you can use vegetable oil to help you achieve a smooth consistency.
Step 2 - Fry rempah (spice paste)
- In a pan, add in 2 Tbsp vegetable oil and fry rempah until fragrant.
Step 3 - Cook chicken in tomato sauce
In the same pan, add lemongrass, canned crushed tomatoes, kaffir lime leaves and 1 cup water.If you have leftovers, the tomato sauce mellows and tastes even better the next day.
Cook for 5 minutes before adding chicken pieces.
Simmer on low to medium heat for 10 to 15 minutes, until the sauce thickens up and chicken is cooked.
Season to taste with salt and sugar, if needed.Add sugar for more sweetness -perfect for kids.
Garnish and Serve!
Transfer chicken in tomato sauce to serving dish and serve hot.
