Feeling under the weather? Soothe your worries away with a comforting bowl of chicken porridge!
Let's start cooking!
Step 1 - Cook porridge
- In a pot, add in rinsed rice, minced ginger and 4 cups mushroom water. Bring to a boil until rice becomes porridge, for about 20 to 25 minutes.
Step 2 - Marinate chicken mince
- In a bowl, add in minced chicken, 2 Tbsp dark soy sauce, 1 tsp light soy sauce, minced ginger, chopped garlic and 1 tsp corn flour. Mix well with 1 Tbsp water.
Step 3 - Stir-fry chicken and mushroom
- In a pan, stir-fry 2 Tbsp vegetable oil, 4sliced soaked shiitake mushrooms and the marinated chicken mince. Stir fry for about 5 to 7 minutes until chicken and mushrooms are cooked.
Garnish and serve!
In a bowl, add in rice porridge and top up with cooked chicken and stir fried mushrooms. Drizzle with 1 tsp sesame oil and garnished with chopped spring onions. Serve hot.
