Drunken Stir-Fried Seafood Pasta - Pasta Taley Pad Khee Mao พาสต้าทะเลผัดขี้เมา

Ingredients
  • 100 grams Spaghetti
  • 10 Bird's eye chilli
  • 10 cloves Thai Garlic
  • 2 tablespoons Vegetable oil
  • 2 Baby Corn
  • 15 Sweet Basil Leaves
  • 1 tablespoon Light soy sauce
  • 2 tablespoons Oyster sauce
  • 1 tablespoon Fish sauce
  • 1½ teaspoons Sugar
  • 4 sprig Green peppercorns
  • 4 dried Chillies
  • Seafood - Mussels, Prawns, Squid
Method
  1. Boil pasta to al dente
  2. Coarsely pound garlic and chilli in mortar
  3. Heat oil in the pan over medium heat and add pounded mixture of garlic and chilli. Sautee until fragrant
  4. Add all the seafood and baby corn and sautee until it's almost cooked
  5. Season with oyster sauce, fish sauce, light soy sauce, sugar and some water
  6. Add pasta, sweet basil and green pepper corn. Mix well
  7. Serve with roasted dried chilli
