Need a healthy 15 minute meal? Here’s a quick and easy Japanese vegetarian recipe, featuring buckwheat noodles and ginger.

Fry ginger in pan

Step 1 - Fry ginger

  • In a pan on medium heat, add 2 Tbsp vegetable oil. When hot, add ginger and fry for 1 minute, until slightly translucent.
  • Reduce heat to low then add 60 ml soy sauce, 60 g honey, 2 Tbsp chili oil, 1 Tbsp sesame oil and 40 ml rice wine vinegar. Stir well and set aside.
Cook soba noodles in boiling water

Step 2 - Cook soba noodles

  • In a pot filled with boiling water and ½ Tsp salt, add soba noodles and blanch for 1½ minutes. Drain, then immediately add to pan.
    This dish is often believed to have “heaty” properties since it uses a lot of ginger, and is used to speed up recovery of moms after childbirth.

Garnish and serve!

Soba noodles with spring onions

Toss well, garnish with ½ Tsp spring onions and a pinch of sesame seeds and nori. Serve!
