French Onion Soup

Ingredients

1kg sliced white onions
8nos smashed garlic cloves
100g Gruyere cheese
1g fresh thyme
Olive oil
Salt 
Black pepper


Method

In a pot, add in your oil and sear the garlic cloves.

Turn down the heat and add in your onions and gently cook them until caramelized.

Add in the thyme and gruyere cheese and add water. Reduce by half.

Season to taste and serve.
