Oatmeal Muffins

Ingredients
  • 2 cups flour
  • 1-cup oatmeal
  • 1 tbsp baking powder
  • One half tsp baking soda
  • One half tsp salt
  • 1-cup brown sugar
  • 1 tsp cinnamon
  • One half tsp nutmeg
  • 2 eggs
  • One-half cup oil
  • 1.5 cups yogurt
  • 1 tsp vanilla extract
  • 1 cup grated carrots (about 3)
Methods
  1. Preheat oven to 350 degrees.
  2. Sift together flour, oatmeal, baking powder, baking soda, salt, brown sugar, cinnamon and nutmeg.
  3. Mix eggs, oil, yogurt and vanilla in a large mixing bowl. Stir in carrots and then dry ingredients.
  4. Spoon into 6 large or 12 regular sized muffin cups. Bake for 30 minutes.
