Crostini With Roasted Garlic And Caraway

Ingredients

Crostini
1 baguette, sliced thinly on the diagonal
3 tbsp olive oil

Roasted Garlic and Caraway Topping
4 heads of garlic
3 tablespoons of olive oil
1 tablespoon caraway seeds
One-quarter cup grated Parmesan cheese
Salt and pepper



Method

Preheat oven to 350 degrees Celsius.

Brush baguette slices with olive oil and place on a baking tray. Bake until they are crispy and golden.

Place whole garlic heads into a small pan and roast in oven until juices begin to bubble from the top and they soften, about 30 minutes.

Remove from oven and rest until cool enough to handle.

With a serrated knife slice the bottoms off of the cooled garlic heads and squeeze the roasted contents into a small bowl.

Add the olive oil, caraway seeds, grated Parmesan and salt and pepper to taste. Mix well.

Spread garlic and caraway mixture over crispy crostini and serve.
