Chicken Pastil

  • Boiled Rice
  • 4 cups rice
  • 4½ cups water
  • Pandan leaves
  • Chicken Kagilit
  • 3 tablespoons cooking oil
  • 1 large onion
  • 6 cloves garlic minced
  • 1 thumb size ginger minced
  • 4 pcs. chicken breast (shredded)
  • 3 tablespoons fish sauce
  • 3 tablespoons soy sauce
  • 3 pcs. banana leaves
  • 2 pcs. hard boiled eggs


    Cooking Rice:
  1. Wash the rice. Wash the rice twice , if you want to wash some of the starches to make it less sticky and fluffy when cooked otherwise once will suffice.
  2. Add water. Add cups of water. Bring the water to boil, then turn the heat down to simmer for 5-10 mins or until the rice has fully absorbed the water.(optional: put pandan leaves)
  3. Cool down. Let it stand for a few minutes until the top surface is not too wet. Fluffy while still hot.
    Chicken Kagikit
  1. Boil the chicken. Cook the chicken in plain boiling water. Once cooked, removed from water and set aside to cool.
  2. Shred the chicken. Once cooled, shred chicken into very small minced.
  3. Sauté. Heat oil in a large pan under medium heat. Cook the onions, garlic, and ginger until turns brown.
  4. Add chicken. Add the shredded chicken. When it turns brown add soy sauce, and fish sauce. Cook until the liquid has dried and the chicken is almost sticking on the bottom of the pan.
    To assemble the pastil
  1. Banana leaf. Place the banana leaf on a flat surface.
  2. Add rice. Put a cup of rice in the middle of the leaf.
  3. Add kagikit. Put a 2-3 spoonfuls of kagikit on the middle top of rice.

Wrap : meet the ends of the leaf together then fold in the middle then fold the other end of the leaf.
