Ingredients

  • 500 grams Oxtail
  • 500 grams Beef Tripe
  • 30 grams Peppercorns
  • 1 whole White Onion
  • 3 pieces Dried Bay leaves
  • TT Fish sauce
  • Water
  • 1 whole White onion; chopped
  • 1 whole Banana Heart
  • 12 pieces Sliced eggplants
  • 8 pieces Bokchoy
  • 2 cups ground peanuts
  • 1 cup peanut butter
  • 250 grams String beans, cut into 3inch segments
  • 1 litre Water
  • 1 cup Annatto seeds
  • 1 cup Ground Rice, toasted
  • 1 tbs Fish Sauce
  • TT Salt
  • TT Pepper
  • Shrimp Paste:
  • TT Oil
  • TT Shrimp Paste
  • TT Bird’s eye chili
  • TT White Onion
  • TT Garlic
  • TT Cane Vinegar

Method

  1. Soak annatto seeds in water. Ratio is 1:1
  2. In a large pot, boil some water and put in the oxtail, tripe, onions, peppercorns, fish sauce and bay leaves . cook until tender
  3. Then in the same pot, add in the peanuts, peanut butter, and the annatto coloring.
  4. Bring to a boil and simmer
  5. Add in the toasted ground rice
  6. Add in the banana heart, string beans, bokchoy and eggplant. Simmer until the veggies are cooked.
  7. Season with fish sauce, salt and pepper.
  8. Saute onion and garlic until fragrant, add shrimp paste, cane vinegar and stir until it smooth, then add chopped bird’s eye chili.
  9. Serve with shrimp paste!
