Pork Skewer with Sticky Rice

  • 0.4 pound Glutinous rice
  • 1 pound Pork Loin
  • 4 Coriander root
  • 2 Cloves Garlic
  • 1 teaspoon White Peppercorn
  • 1 teaspoon Coriander Seed
  • ½ Chili Flake
  • 1½ tablespoons Palm Sugar
  • 2 tablespoons Coconut Milk
  • 2 teaspoons Corn Starch
  • Sauce:
  • 2 tablespoons Tamarind Paste
  • 1½ tablespoons Fish Sauce
  • 0.04 pound Palm Sugar
  • 1 teaspoon Chili Flake
  • Shallot, thin sliced to serve
  • Spring Onion to serve
  • Roasted Rice to serve
  • Long Bean to serve
  • Cabbage to serve
  • Sweet Basil to serve


    To prepare:
  1. Rinse and soak glutinous rice 3 hrs. to 5 hrs.
  2. Soak the bamboo skewers in water for at least 1 hour.
  3. Marinate pork at least for 6 hrs. to overnight.
  1. Put the soaked glutinous rice on cheese cloth with one pandanus leaf (Optional), heat in the steamer for 25 minutes.
  2. Prepare the marinate by dry roasting coriander seed in a pan until fragrant and ground together with palm sugar, coriander root, garlic and pepper together. Mix the paste with chili flake, oyster sauce and coconut milk.
  3. Cut pork into small pieces and pour in the marinate, put corn starch. Leave in refrigerator for 6 hrs. to overnight for better taste.
  4. Put marinated pork onto skewers.
  5. Heat grilled pan or oven, then grill them until cook well.
  6. To make a sauce, heat tamarind paste, fish sauce. palm sugar with 1 tablespoon water together, add chili flake, shallot, spring onion and roasted rice.
  7. Serve pork skewer with sticky rice and spicy tamarind sauce.
