Soy Sauce Grilled Chicken (Ayam Panggang Kecap)

  • 1 chicken, cut into four pieces
  • 1 teaspoon tamarind water
  • 1 teaspoon salt sdt
  • 6 tablespoons soy sauce
  • 1 teaspoon sugar
  • For the ground spices:
  • 2 bird’s eye chili
  • 8 shallots
  • 4 garlics
  • 1 teaspoon white peppercorns
  • 3 candlenuts, roasted
  • ½ teaspoon salt
  • 3 tablespoons butter


  1. Mix the chicken with tamarind water and salt, and set aside.
  2. Stir-fry the ground spices with butter, until we can smell the aroma.
  3. Put in the chicken, pour 650 ml water, add some soy sauce, sugar and salt.
  4. Cook with low heat until the chicken is tender, and the sauce almost dry.
  5. Take out the chicken, and leave the ground spices for the roasting later.
  6. Roast the chicken in the oven 180 degrees celcius.
  7. Spread the chicken with the grounded spices while it’s still roasted, until it’s well cooked and caramelized.
  8. Serve it with hot rice, vegetables and sambal.
