Root Vegetable Puree

Ingredients:

100g Green Zucchini
50g Yellow Squash
50g Carrot
50g Onion
20g Leek
6nos Garlic Cloves
1g Fresh Thyme
Salt
Black Pepper
Olive Oil
 
 
Method:

Fabricate all the root vegetables into 0.5 cm cubes.

Preheat your pan with olive oil and cook your garlic first.

Add in all the rest of urn vegetables and cook until tender.

Add in the thyme.

Add in water and simmer for 15 minutes.

Puree in a blender and season to taste.
