Baked Salmon

As with all meals, the main dish is the star of the show, and this classic baked salmon dish will not fail to impress. Using only 3 main ingredients, this fuss-free recipe can be done in under 30 minutes.

Ingredients

Salmon
Cherry Tomatoes
Brussel Sprouts
Olive Oil/Butter
Salt
Pepper

Before you start working on the salmon, remember to preheat the oven to 230°C. While waiting for it to heat up, prepare the salmon by drizzling some olive oil, and season it with salt, pepper, and some dried herbs of your choice. We’ve chosen fresh rosemary cause it goes so well with salmon, but if you prefer, you can also use dill, oregano, thyme or whatever’s lying around in your kitchen.

Sprinkle chopped cherry tomatoes over the fish before wrapping it up in aluminium foil or parchment paper. The cherry tomatoes will add a natural sweetness to the salmon when cooked together.

Now that the salmon’s ready to go, place your Brussel sprouts in a bowl. Add a teaspoon of butter and season with salt and pepper to taste. Alternatively, you can also use asparagus or broccoli if Brussel sprouts is not your cup of tea.

Place the salmon parcels and Brussel sprouts on a baking tray and let it bake in the oven for 20 minutes, and there you have the star of the show ready for your guests!

White Chocolate Cookie Balls

While waiting for your salmon to cook, you can start preparing your dessert, and it doesn’t get any simpler than these yummy no-bake cookie balls.

Ingredients:

1 packet Chocolate Sandwich Cookies
1 packet Cream Cheese
1 packet White Chocolate Chips
1-2tsp Canola Oil Rainbow Sprinkles (optional)

Start with placing a handful of chocolate sandwich cookies in a re-sealable bag. Use a rolling pin to crush these cookies into a crumbly texture. While using a food processor will achieve the same effect, this method is definitely more fun!

Add the cookie crumbs into a bowl of cream cheese and mix them well. Then, it’s time to get your hands dirty. Grab some of the mixture and roll them into the size of a small golf ball. Refrigerate the cookie balls till it holds its shape.

In a bowl, pour the white chocolate chips and canola oil, and microwave them in 25-second intervals. Stir regularly until the chocolate chips are melted completely into a smooth mixture. Coat the chilled cookie balls with the white chocolate mixture and top them with some rainbow sprinkles before placing them back into the refrigerator to set.

There you go! It only takes five ingredients and a fraction of your time to produce these sweet treats!
