Yee Sang

Huat ah! Enjoy this beautiful, auspicious dish, known as raw fish salad or yusheng, with your family and bring prosperity into your home. Toss it as high as possible as it is believed that one will have more prosperity the higher one tosses the salad!

Fun Fact
  • Popularized in Singapore and Malaysia, this dish is actually not at all common in Hong Kong and most of Mainland China
  • Most will consume this dish on Renri, the seventh day of the Chinese New Year
Ingredients
  • 100 g fresh salmon, sliced
  • 450 g of daikon (white radish), julienned
  • 450 g of carrot, julienned
  • 1 pcs red capsicum, julienned
  • 1 Tbsp fresh ginger, shredded paper thin
  • 60 g sweet pickled ginger, finely shredded
  • 7 pcs fresh kaffir lime leaves, sliced thinly (substitute with lime wedges)
  • 4 sprigs coriander
  • 60 g peanuts, crushed
  • 140 g plum sauce (substitute all ingredients for plum sauce with 140 ml honey)
  • 1 Tbsp + ⅛ tsp five-spice powder (substitute with 1 tsp white pepper and cinnamon each)
  • Toasted sesame seeds
  • 1 pkt golden crackers (substitute with shrimp crackers)
  • 1 pcs lemon, squeezed
  • ½ cups water
  • 1½ Tbsp vegetable oil
  • 1 tsp sesame oil
  • ⅓ cup + ¼ tsp sugar
  • ⅛ tsp white pepper
  • Salt to taste
Method

Soak radish and carrots

In separate bowls, cover finely shredded radish and carrots with cold water and set aside.

Chef's Tip
  • Covering shredded radish and carrots with cold water would prevent it from drying out and browning

Mix and cook the plum sauce dressing

Mix and cook the plum sauce dressing

To make the dressing, mix 140 g plum sauce and ½ cup water together. Heat 1½ Tbsp vegetable oil over low heat and add the plum sauce mixture, ⅓ cup sugar and a pinch of salt. Cook until sugar dissolves, then set aside.

  • Honey can be substituted for plum sauce

Marinate the salmon

Mix 1 tsp vegetable oil, 1 tsp sesame oil, ¼ tsp sugar, ⅛ tsp white pepper, ⅛ tsp five-spice powder, juice of 1 lemon and a pinch of salt together in a bowl. Add salmon slices and mix. Set aside.

Drain and arrange the vegetables

Rinse the carrots and daikon, then squeeze out excess water. Arrange the daikon, carrot, red bell pepper, ginger, sweet pickled ginger, and coriander in a circle on a large platter.


Start the ritual
  1. Yee sang has traditional sayings that go along with finishing the dish, and should be done in order and poured over the platter in a circular motion
  2. Fish – 年年有余 (nián nián yǒu yú)
  3. Kaffir lime leaves/lime wedges to squeeze – 大吉大利 (dà jí dà lì)
  4. Five-spice powder – 招财进宝 (zhāo cái jìn bǎo)
  5. Oil – 一本万利 (yī běn wàn lì) or 财源广进 (cái yuán guǎng jìn)
  6. Crushed peanuts – 金银满屋 (jīn yín mǎn wū)
  7. Sesame seeds – 生意兴隆 (shēng yì xīnglóng)
  8. Plum sauce/honey – 甜甜蜜蜜 (tián tián mì mì)
  9. Golden crackers – 满地黄金 (mǎn dì huáng jīn)
  10. You are ready to toss! Lo hei!
