Braised Meat Nachos

- 450 grams minced pork
- 1 bag Tortilla chips
- 5 tomatoes, deseeded and diced
- 200 grams grated Mozzarella
- 200 grams grated Cheddar Cheese
- 1 cube chicken bouillon
- 2 onions, chopped
- 5 shallots, chopped
- 1 small radish, sliced
- 2 red chillies, sliced
- 2 Tbsp cider vinegar
- 1 Tbsp + 2 ½ tsp sugar
- 3 Tbsp light soy sauce
- 2 Tbsp dark soy sauce
- 60 ml Shaoxing wine
- 2 tsp oil
- 2 star anise
- 1 cinnamon stick
- 6 cloves
- 3 bay leaves
- 2 slices fresh ginger
- 1 ½ cups water
- ½ bunch Coriander, chopped
- Substitute minced pork with minced chicken if you like
Prepare the minced meat
Put star anise, cinnamon stick, cloves, bay leaves and ginger into a cheese cloth and tie it.
Heat oil in a pan on medium low heat.
Add 2½ tsp sugar and onions. Stir-fry the onions until soft.
Increase heat to medium. Add in minced pork, Shaoxing wine, 3 Tbsp light soy sauce, 2 Tbsp dark soy sauce and water.
Stir-fry to a boil and add in the bag of spices. Turn the heat to low and let it simmer for 1 hour, stirring occasionally.
Prepare the pickles
Mix cider vinegar and sugar to a bowl.
Add in radish and refrigerate until ready to serve.
Prepare the toppings and plate
On a plate, place a layer of Tortilla chips.
Top with minced pork, diced tomato and a layer of cheddar and mozzarella cheese.
Garnish with pickled daikon, coriander, red chilies and serve.
- If you like your cheese melted and gooey, pop the plate into the oven till the cheese melts
