Egg Soufflé Burger Bun
Makes 3 buns
Prep time: 5 minutes
Cook time: 25 minutes
- 6 eggs, whites and yolks separated
- 140 g cream cheese, cold
- ¼ tsp cream of tartar
- 1½ tsp white sesame seeds
Prepare the egg mixtures
Preheat the oven to 160°C.
In a bowl, whisk the egg whites with cream of tartar until stiff peaks form.
In a separate larger bowl, whisk the yolks and cream cheese until creamy.
- Use a clean glass or metal bowl when working on the egg whites!
Combine the egg mixtures
Gently fold 1/3 of the whites into the yolks to lighten the mixture.
Add in the rest of the whites and continue to fold gently until it is mostly incorporated.
Bake the “buns”
Spoon the egg mixture onto a greased baking sheet, and create even circles.
Smoothen the top slightly, and sprinkle some sesame seeds on half of the circles.
Bake for 20-25 minutes.
Once done, remove from the oven and leave to cool on a rack before assembling burgers with your very own choice of ingredients.
