Make the sauce

Heat pan with 2 Tbsp olive oil on medium low heat. Add 1 tsp cumin seeds and toss for 1 minute until fragrant.

Stir in onions and cook for 10 to 12 minutes, or until the onions turn translucent. Add garlic, 1½ tsp garam masala, 1 tsp ground coriander, ½ tsp turmeric, ¼ tsp dried chili powder. Stir constantly for 1 minute.

Pour in tomato chunks with their juices and add bay leaves.

Make the sauce

Bring to boil and lower the heat to a simmer. Stir occasionally for 20 minutes.

Add salt to taste.

Add the yogurt and eggs

Stir in Greek yogurt into the pan. Crack one egg into a small bowl.

Make a well in the sauce and carefully slip the egg into the gap. Repeat this for all the eggs.

Cover pan with lid and leave to simmer for about 5 minutes.
