Pork ribs in boiling hot water

Step 1 - Boil pork

  • In a pot filled with boiling water, add pork and boil for 5 minutes. Skim off the scum from the top of the boiling water, then remove the pork from pot and set aside.
  • Transfer water into a larger pot and bring to a boil.

Step 2 - Simmer soup

  • Add pork and all remaining ingredients to the second larger pot. Bring to a boil, then cover and reduce heat to low. Simmer at medium low heat for 45 minutes. After 45 minutes, season with salt to taste, then remove from heat.
    Core ingredients in this dish include pork/chicken ribs, carrots, potatoes, tomatoes, then throw in whatever vegetables you have on hand.
    This dish is supposedly named for vitamin A (from carrots), vitamin B (from potatoes) and vitamin C (from tomatoes).

Plate and serve!
