Also known as ‘adobong baboy’ in Tagalog, this Filipino pork dish is deliciously savory with a tinge of sour vinegar!

Step 1 - Marinate pork
- In a large mixing bowl, add pork, 6 Tbsp white vinegar, 120 ml soy sauce and 2 Tbsp sugar. Mix well, and set aside for 20 minutes to marinate.
Pork shoulder is a healthier option, but pork belly, with the ample amount of fat, makes the dish much more flavorful.
Step 2 - Cook pork
- In a pan on medium heat, add 2 Tbsp vegetable oil. When hot, add garlic, bay leaves and black peppercorns and stir-fry for 30 seconds.
- Add pork shoulder and 400 ml water. Cook for 10-15 minutes, or until greatly reduced.
Plate and serve!
Serve hot with rice.
