A vegetarian variant of popular potato street food, Aloo Chaat, in North India and Pakistan, here’s how to make your own sweet potato and cauliflower version!

Step 1 - Preheat oven and cut vegetables
Preheat oven to 190°C.
Chop onion and cauliflower.
Dice sweet potatoes into 2 cm lengths.
Step 2 - Toss ingredients together
- In a large bowl, toss onions, cauliflower, sweet potatoes, chickpeas, curry powder, red chili flakes, cumin seeds and 4 Tbsp olive oil together until well mixed.
Step 3 - Bake aloo gobi
- Place ingredients into a baking dish or baking tray and roast for 40 to 45 minutes, until everything is cooked through and tender.
Plate and serve!
Transfer aloo gobi onto serving dish and serve hot.
