A vegetarian variant of popular potato street food, Aloo Chaat, in North India and Pakistan, here’s how to make your own sweet potato and cauliflower version!

Diced sweet potate

Step 1 - Preheat oven and cut vegetables

  • Preheat oven to 190°C.

  • Chop onion and cauliflower.

  • Dice sweet potatoes into 2 cm lengths.

Red chili flakes and cumin seeds added to large bowl

Step 2 - Toss ingredients together

  • In a large bowl, toss onions, cauliflower, sweet potatoes, chickpeas, curry powder, red chili flakes, cumin seeds and 4 Tbsp olive oil together until well mixed.

Step 3 - Bake aloo gobi

  • Place ingredients into a baking dish or baking tray and roast for 40 to 45 minutes, until everything is cooked through and tender.
In Hindi, alootranslates to potatoes and gobi translates to cauliflower.

Plate and serve!
