Asian Style BBQ Chicken on Noodles
Marinated chicken that has been fried to perfection, crispy on the outside and tender on the inside, served on a bed of noodles. Utterly scrumptious!
Let's start cooking!
Step 1 - Marinate chicken
In a blender, blend ¼ cup fish sauce, yellow onion, garlic cloves, ginger, lemongrass, mint, Thai basil, chili padi, 2 Tbsp kecap manis, 1 cup orange juice and 1 tsp ground black pepper.You can adjust the spiciness level of this dish by adding or removing the amount of chili padi in the marinade.
In a bowl, add in chicken and marinade.
Mix well and let it marinate for at least 30 minutes.To save time and add flavor, you can marinate the chicken the night before.
Step 2 - Fry chicken
- After marinated, on a pan on high heat, heat up 3 Tbsp vegetable oil.
- Place chicken, skin side down, for 3 minutes before flipping it over until chicken is tender and cooked through.
- Set aside and let it rest for 5 minutes before slicing into it to serve.
Step 3 - Mix noodle salad
- In a mixing bowl, add in cooked flat noodles, along with sesame oil, soy sauce, large red chili, cucumber, spring onions and bean sprouts.
- Mix well.
Garnish and serve!
Transfer the noodles to serving plate or bowl. Slice up chicken into strips and place over the rice noodles. Garnish with additional large red chili slices and serve immediately.
