Translating to sambal chili chicken, this spicy dish with chicken, tomatoes and fragrant lemongrass is super yummy!

Let's start cooking!

Deep fried chicken in a pot of hot oil for sambal chilli chicken

Step 1 - Cut and deep-fry chicken

  • Cut chicken into large chunks, then sprinkle salt and set aside for 20 minutes.

    Use chicken leg for more tender meat.
  • In a pot of oil on medium heat, deep-fry chicken until golden brown, for about 2 minutes.

Step 2 - Blend chili paste and cook sambal chili chicken

  • In a blender, add shallots, chili, garlic and lime leaves. Blend into a fine paste and set aside.

    Dry chilies can be used instead of regular red chili.
  • In a pan on medium heat, toast belacan until aromatic. After 3 minutes, add in chili paste lemongrass and sliced onions and fry until fragrant.

  • Add in fried chicken and diced tomatoes. Toss to coat evenly. Season with salt and sugar to taste.

Garnish and serve!
