METHOD

  1. Soak soya beans and barley overnight.

  2. Remove the green skin of the aloe vera and cut the flesh to small cubes.

  3. Blend soya beans with 2 cups of water in a glass blender until fine.

  4. Strain to get the soya milk. Put it aside.

  5. Blend barley with just enough water. No sifting required.

  6. Pour balance of water into a pot and add the blended barley.

  7. Cook the barley for a few minutes until it dissolves and becomes smooth.

  8. Add soya milk and rock sugar. Cook further until it comes to a boil.

  9. Adjust the sweetness according to taste.

  10. Add in aloe vera cubes and stir well.

  11. Add pearls into the barley soya only when ready to serve.

TO MAKE PANDAN PEARLS:

  1. Blend pandan leaves in a glass blender and sift to get the juice.

  2. Boil pandan juice with 2 tbsp sugar and 3 tbsp water.

  3. Add just enough boiling pandan water into the potato starch.

  4. Mix until it forms a dough.

  5. Roll with palm until long and thin.

  6. Cut into small pearls.

  7. Put the pearls into the boiling pandan water.

  8. When pearls come to a boil, remove and immediately drop them into cold water.

  9. Add pearls into the barley soya only when ready to serve.
