Step 1 - Make rempah (spice paste)
- In a blender, blend shallots, garlic, chopped ginger, lemongrass and 1 Tbsp turmeric powder until smooth.
- If mixture is too dry, you can use vegetable oil to help you achieve a smooth consistency.
To make your own tamarind juice, mix tamarind pulp with hot water and strain.
Step 2 - Fry the rempah
- In a pan, sauté rempah for 10 minutes, until fragrant and oil begins to appear on the surface.
Step 3 - Add beef and season
In same pan, add finely sliced beef, 3 Tbsp chili powder, ½ Tbsp salt, tamarind juice, ½ cup kecap manis, brown sugar and 1 cup water.
Stir well and let it simmer on medium heat for 10 minutes, until the beef is tender and the sauce is almost dry.You can change the cut of meat to striploin, sirloin or topside.
Season to taste with salt, white pepper and brown sugar if needed.
Plate and Serve!
Transfer beef to serving plate or dish and garnish with spring onions and large red chili. Serve hot.
