Step 1 - Marinate beef

  • In a mixing bowl, mixbeef sliced, 1 Tbsp oyster sauce, ½ Tbsp minced garlic, minced lemongrass, ½ Tsp salt, ½ Tsp pepper and 1 Tbsp vegetable oil until beef is evenly coated.

    You can use sirloin and tenderloin instead of ribeye
  • Marinate for at least 15 minutes.

    To save time and add flavour, you can marinate the beef slices the night before

Step 2 - Stir-fry marinated beef

  • In a pan on medium-high heat, add 2 Tbsp vegetable oil and ½ Tbsp minced garlic and sauté for 1 minute, until fragrant.
  • Once fragrant, add marinated beef to the pan and stir-fry on high heat for 3 to 4 minutes, until the beef is no longer pink.

Step 3 - Blanch noodles

  • In a pot of boiling water, cook flat rice noodles following package instructions.
You can replace flat rice noodles with bee hoon, kway tiao or laksa noodles

Plate and serve!

Arrange a portion of flat rice noodles in the centre of serving plate and top with stir-fried beef, do chua, fresh greens, fried shallots and crushed peanuts. Pour fish sauce over the noodle and serve. Toss well before eating.
