Beautiful pastry encasing ground beef filling, packed with delicious spices. Re-create this Spanish-inspired Filipino staple in the comfort of your home!
Let's start cooking!
Step 1 - Make dough
In a mixing bowl, mix flour and 1 tsp salt together.
Add 2 Tbsp vegetable oil and stir by hand to coat flour in oil.
To the mixing bowl, rub in and break apart butter in the flour until no large pieces of butter are visible.
Add milk and 1 egg yolk into the bowl, mixing until dough comes together.
Place the dough onto a working surface and shape the dough into 2 cylinders.
Wrap each dough in plastic wrap and chill for 2 hours.
Step 2 - Make beef filling
In a pan on medium heat, heat up 2 Tbsp vegetable oil and stir-fry onion, beef, 2 tsp cumin powder, 2 tsp paprika powder, 2 tsp chili powder, 1 tsp dried oregano and 1 tsp salt for 5 to 8 minutes until beef is completely cooked.
Set aside to cool.
Step 3 - Add spring onion, eggs and olives to beef filling
After cooling, stir the spring onions, eggs and olives into the meat.
Season to taste with salt if needed.
Step 4 - Preheat oven and divide dough
Preheat the oven to 190°C.
Unwrap the dough and slice each into 8 even pieces.
Step 5 - Trim dough
- Roll out each piece and use a 6-inch round cutter to trim the edges.
Step 6 - Form beef puffs
- Place 1 Tbsp beef filing into the centre of the dough and brush the edges of the dough with egg whites.
Step 7 - Seal filled pastry
- Fold dough over the meat filling and use a fork to press and seal edges.
Step 8 - Brush with egg wash and bake
In a small bowl, whisk egg yolk and 1 Tbsp water until well mixed.
Place sealed puffs on a baking tray lined with parchment paper and gently brush the surface of each puff with egg yolk mixture.
Bake beef puffs for 30 minutes, until golden brown.
Plate and serve!
Place baked beef puffs on serving dish and serve warm.
