Cheese foam tea has been a huge phenomenon across East and Southeast Asia. Instead of queueing for hours, here’s how to make some of that creamy, delicious goodness in the comfort of your own home!

Step 1 - Steep tea

  • In a pot, steep tea in hot boiling water for at least 5 minutes, along with 50 g sugar. Remove from heat and set aside to cool for 20 minutes.
    You can use black or green tea for this drink, although red tea and oolong tea is also becoming more popular.

  • In a bowl, add cream, 2 tsp salt and 50 g sugar and whip until stiff peaks form. Set aside.
  • In another bowl, add milk and cream cheese and whip until smooth. Set aside.
  • Using a spatula, gently fold cream mix into the cream cheese mix and stir until evenly combined. Set aside.

Some recommend stirring the cheese foam into the tea before sipping from a straw, and others sipping straight from the cup, to taste the complex and layered flavors of tea and cream cheese

Assemble and serve!

To serve, fill a glass about 80% full, then top off with cheese foam. Serve cold.
