Marinated chicken

Step 1 - Marinate chicken

  • In a bowl, mix chicken pieces with 1 tsp salt, 1 tsp black pepper and 1 Tbsp curry powder until evenly coated. Set aside to marinate for 10 to 15 minutes.
Fried marinated chicken

Step 2 - Fry marinated chicken

  • In a pan on medium-high heat, heat up 3 Tbsp vegetable oil and fry marinated chicken for 5 to 7 minutes until browned on all sides. Remove from pan and set aside.
Stir-fry yellow onions, garlic, ginger and turmeric powder

Step 3 - Stir-fry yellow onions, garlic, ginger and turmeric powder

  • In a pot on medium heat, heat up 2 Tbsp vegetable oil and fry yellow onions, garlic, 1 tsp turmeric powder and grated ginger.
  • Stir-fry for 5 minutes, until onions appears translucent.
Stew with spices, coconut sugar, coconut cream and chicken stock

Step 4 - Add spices, coconut sugar, coconut cream and chicken stock

  • To the same pot, add curry leaves, kaffir lime leaves, large red chili, lemongrass, coriander seeds, hot pepper flakes, fennel seeds, cumin powder, cinnamon powder, garam masala, cardamom pods, 2 Tbsp curry powder, coconut sugar, coconut cream and chicken stock.

  • Mix well, increase to high heat and bring to a boil.

Tomato, potato and fried chicken in sauce

Step 5 - Add tomatoes and potatoes

  • Once boiling, add tomatoes and potatoes and fried chicken to the pot. Mix well, keeping heat high until everything is bubbling away. .

  • Cover with a lid and reduce to a medium-low heat.

  • Let it simmer for 1 hour until the potatoes are cooked and the chicken is tender.

Ladle and serve!
