Chicken and Potato Curry

Step 1 - Marinate chicken
- In a bowl, mix chicken pieces with 1 tsp salt, 1 tsp black pepper and 1 Tbsp curry powder until evenly coated. Set aside to marinate for 10 to 15 minutes.
Step 2 - Fry marinated chicken
- In a pan on medium-high heat, heat up 3 Tbsp vegetable oil and fry marinated chicken for 5 to 7 minutes until browned on all sides. Remove from pan and set aside.
Step 3 - Stir-fry yellow onions, garlic, ginger and turmeric powder
- In a pot on medium heat, heat up 2 Tbsp vegetable oil and fry yellow onions, garlic, 1 tsp turmeric powder and grated ginger.
- Stir-fry for 5 minutes, until onions appears translucent.
Step 4 - Add spices, coconut sugar, coconut cream and chicken stock
To the same pot, add curry leaves, kaffir lime leaves, large red chili, lemongrass, coriander seeds, hot pepper flakes, fennel seeds, cumin powder, cinnamon powder, garam masala, cardamom pods, 2 Tbsp curry powder, coconut sugar, coconut cream and chicken stock.
Mix well, increase to high heat and bring to a boil.
Step 5 - Add tomatoes and potatoes
Once boiling, add tomatoes and potatoes and fried chicken to the pot. Mix well, keeping heat high until everything is bubbling away. .
Cover with a lid and reduce to a medium-low heat.
Let it simmer for 1 hour until the potatoes are cooked and the chicken is tender.
Ladle and serve!
Ladle chicken and potato curry into serving bowl and serve hot.
