The perfect solution to make good use of the leftovers from last night’s dinner! Whip up this quick Chinese fried rice dish in no time. Here’s how!

Fry scramble eggs

Step 1 – Fry Scrambed eggs

  • In a pan on medium-high heat, heat up 2 Tbsp vegetable oil and fry 3 beaten eggs for 3 to 4 minutes, stirring occasionally, until scrambled.
Stir-fry carrots, long beans and chicken

Step 2 – Stir-fry carrots, long beans and chicken

  • In the same pan, add minced garlic, carrots, long beans and chicken. Stir-fry for 4 to 5 minutes, until chicken is cooked through.
You may substitute chicken with other protein, like seafood
Add rice to pan

Step 3 – Add rice to pan

  • Increase heat to high and add cooked rice, 2 Tbsp soy sauce, 1 Tbsp sesame oil into the pan. Stir-fry for 5 minutes, until rice is well combined with ingredients.
Stir in spring onions

Step 4 – Stir in spring onions

  • Remove from heat and stir in spring onions. Taste and if needed, season with 1 tsp salt and 1 tsp white pepper.
Top this dish with fried garlic and shallots, which can be easily bought most supermarkets in Asia.

Plate and serve!
