Ingredients

Tender and juicy chicken, coated in a well-seasoned, aromatic red tomato sauce.

Let's start cooking!

Shallots, large red chilies, ginger and garlic in a blender

Step 1 - Blend rempah (spice paste)

  • In a blender, blend shallots, large red chilies, ginger and garlic until smooth.
  • If mixture is too dry, you can use vegetable oil to help you achieve a smooth consistency.

Step 2 - Fry rempah (spice paste)

  • In a pan, add in 2 Tbsp vegetable oil and fry rempah until fragrant.

Step 3 - Cook chicken in tomato sauce

  • In the same pan, add lemongrass, canned crushed tomatoes, kaffir lime leaves and 1 cup water.

    If you have leftovers, the tomato sauce mellows and tastes even better the next day.
  • Cook for 5 minutes before adding chicken pieces.

  • Simmer on low to medium heat for 10 to 15 minutes, until the sauce thickens up and chicken is cooked.

  • Season to taste with salt and sugar, if needed.

    Add sugar for more sweetness -perfect for kids.
