Let's start cooking!

Ginger and star anise added to heated pan

Step 1 - Fry spices

  • In a large pan on medium heat, heat 3 Tbsp vegetable oil and fry the shallots and garlic for 2 to 3 minutes until fragrant, then add in star anise, cloves and ginger, and mix well for 1 minute.
Dark soya sauce added to pan with chicken

Step 2 - Stir-fry and season chicken

  • To the same pan, add chicken, 1 Tbsp dark soy sauce, 1 Tbsp soy sauce and tau cheo and stir-fry for 2 minutes
Rub the cleaned chicken skin with salt to give the chicken skin a nice sheen when cooked, but rinse off excess salt afterwards. For more color, add more dark soy sauce.
Sugar added to chicken stew

  • Add in 3 cups water, mushrooms, potatoes, large red chili, 2 Tbsp sugar and 1 tsp white pepper.
