Chinese Eggplant Salad
Simply fragrant and easy to cook, this Chinese-style brinjal salad will be your next go-to dish!

Step 1 - Slice eggplants
- Slice eggplant into 3 inch pieces. Season with ½ tsp salt.
Eggplant, also known as aubergine or brinjal, is classified as a fruit. They share the same ancestry as potatoes and tomatoes
Step 2 - Steam eggplants
- Place eggplant in steamer and steam for 10 minutes.
Step 3 - Fry garlic slices
- In a pan, heat up 2 Tbsp vegetable oil and fry garlic until brown and crispy. Drain fried garlic slices on a paper towel-lined plate.
Garnish and serve
Arrange eggplant on plate and drizzle with 1 tsp soy sauce, 1 tsp sesame oil, 1 Tbsp chili oil, sliced coriander leaves and sliced large red chili. Sprinkle garlic chips over top and serve.
