Let's start cooking!

Clean lotus root

Step 1 - Prepare lotus root

  • Peel and clean lotus root, then slice and set aside.
A great source of fiber, lotus root is also rich in vitamin B, copper and potassium.
Add pork into soup

Step 2 - Boil pork

  • In a pot filled with boiling water, add pork and boil for 5 minutes. Skim off the scum from the top of the boiling water, then transfer the pork to a larger pot.
Add seasoning into soup

Step 3 - Simmer soup

  • Add sliced lotus root, corn, carrot, ginger, garlic and 2 Tbsp Shaoxing wine to the pot. Cover and simmer at medium low heat for 2 hours. After 2 hours, season with salt to taste, then remove from heat.
For added flavor, you can also add ½ cup shelled peanuts or groundnuts to the soup.
Mix dipping sauce

Step 4 - Make dipping sauce

  • In a small dish, combine 2 Tbsp light soy sauce, 2 Tbsp dark soy sauce, 1 Tbsp sugar and chili padi.
