Try out this simple and healthy vegetable soup, perfect for even the fussiest eater!

Peel the thin fibrous layer of the spinach

Step 1 - Cut and clean spinach

  • Cut off roots of spinach then peel away some of the thin fibrous layer covering the entire stem.
  • Cut the spinach into 10 cm lengths. Rinse to remove all traces of dirt till water runs clear. Drain and set aside.

Add spinach to soup {step}Step 2 - Boil soup[step}

  • Heat up ½ Tbsp oil in a soup pot or wok. Fry garlic till fragrant then add dried ikan bilis and 4 cups water.
  • Bring to a boil then simmer for 15 minutes. Remove dried anchovies from soup, leaving the garlic in the soup.
  • Bring the soup to a boil again.
  • Add spinach, salted egg and century egg. Stir gently and cook for about 2 -3 minutes till the spinach is tender.
  • Don't overcook or the spinach will be too soft. Season with salt if necessary.

Plate and serve!
