Step 1 - Make batter

  • In a large bowl, mix 1 tsp salt, baking soda, white sugar, rice flour, wheat flour and desiccated coconut until evenly mixed.
  • To the same bowl, add in coconut cream, eggs and 100 ml water. Mix until well combined.

Step 2 - Deep-fry batter

  • In a pot, heat up enough vegetable oil for deep-frying. With 2 oiled spoons, place 1 Tbsp batter into the hot oil and let it fry for 3 to 4 minutes, until golden brown.

    Dipping spoons in oil will prevent the batter from sticking to the spoon
  • Drain deep-fried cucur kelapa onto a paper towel-lined plate. Repeat until batter is used.

Plate and serve!
