Deep Fried Green Papaya Salad

Step 1 - Coat papaya with tapioca starch
- In a bowl, toss grated green papaya strips with 40 g tapioca starch. Set aside.
Step 2 - Make som tum dressing
In a mortar, pound dried shrimps, garlic cloves and chili padi until fine.
Add palm sugar, 2 Tbsp fish sauce and pound until well combined.
Step 3 - Pound long beans and peanuts
- Add long beans and chopped peanuts. Pound until long beans are bruised. Season to taste with lime juice.
Step 4 - Deep-fry papaya strips
In a pot on high heat, heat up enough vegetable oil for deep-frying papaya strips.
Shake off the excess tapioca starch from the papaya strips and deep-fry for 1 to 2 minutes, until golden brown.
Garnish and serve
Arrange fried green papaya on serving plate. Drizzle som tum dressing over the fried papaya strips and sprinkle chopped peanuts and cherry tomatoes.
