Ingredients

This chicken, soaked in Chinese wine and eaten with crunchy fungus, is always a treat!

Let's start cooking!

Marinated chicken with sesame oil, soy sauce , ginger juice and seasonings

Step 1 - Marinate chicken

  • Marinate the chicken pieces with 1 Tbsp sesame oil, 1 Tbsp soy sauce, 2 tsp sugar, 1 tsp salt, 1 tsp white pepper and 6 Tbsp ginger juice. Mix well and set aside.
To make ginger juice, blend 20 g ginger with 5 Tbsp water and strain
Cooked fungus in boiling water

Step 2 - Boil fungus and soak in wine

  • In a small pot of boiling water, cook the pre-soaked snow fungus and black fungus for 2 minutes. Drain both then soak in Chinese cooking wine.

Step 3 - Cook chicken and fungus

  • Combine the fungus mixture and chicken into the clay pot then steam for 1 hour.
Classic drunken chicken is a popular appetizer in Shanghainese cuisine, and usually eaten cold or at room temperature

Garnish and serve!
