with Black and White Fungus
This chicken, soaked in Chinese wine and eaten with crunchy fungus, is always a treat!
Let's start cooking!
Step 1 - Marinate chicken
- Marinate the chicken pieces with 1 Tbsp sesame oil, 1 Tbsp soy sauce, 2 tsp sugar, 1 tsp salt, 1 tsp white pepper and 6 Tbsp ginger juice. Mix well and set aside.
Step 2 - Boil fungus and soak in wine
- In a small pot of boiling water, cook the pre-soaked snow fungus and black fungus for 2 minutes. Drain both then soak in Chinese cooking wine.
Step 3 - Cook chicken and fungus
- Combine the fungus mixture and chicken into the clay pot then steam for 1 hour.
Garnish and serve!
Once cooked, garnish with spring onions and serve directly from the clay pot.
