Pair this fiery chili clams with pasta for the perfect combination of Italian and Chinese cuisine!

Combine chicken stock,ketchup,chili garlic sauce, white vinegar and sugar in a bowl

Step 1 - Make seasoning

  • In a bowl, combine chicken stock, ketchup, chili garlic sauce, 1 Tbsp soy sauce, 1 Tbsp white vinegar and 2 Tbsp sugar. Set aside.

Step 2 - Fry clams

  • In a pan on high heat, heat 2 Tbsp vegetable oil and stir-fry sliced ginger, sliced garlic, chili padi for 10 seconds until fragrant.
  • Add clean clams, seasoning, spring onion and cilantro.
  • Toss and stir until well combined. Cover and cook for 6 to 8 minutes, until clams open.
  • Season to taste with salt.
  • If you would like this as a main dish, add cooked pasta to the pan.
  • Toss well and let it cook for 5 minutes {tips}You can serve it as a side dish or add pasta of your choice to turn it into a main dish.

Plate and Serve!
