Good Fortune Prawns

Step 1 - Preheat the oven and fry the garlic
Preheat oven to 180°C.
Mince garlic then pan-fry half the garlic until fragrant and set aside.
Step 2 - Prepare the prawns
Use scissors to remove legs from prawns.
Slice open each prawn length wise from the back side, leaving the belly and shell intact.
- Flatten each prawn and lay it on a oven tray lined with baking paper.
Step 3 - Mixing in minced garlic into the stuffing
- In a small bowl, combine the rest of the garlic with ½ tsp salt, 2 Tbsp white pepper, 1 Tbsp sugar and 2 Tbsp fish sauce.
Step 4 - Stuff and bake the prawns
- Spread the garlic mixture evenly on each prawn and place dish in an oven on the upper shelf to cook at 180°C for 8-10 minutes, keeping a close eye on it.
Garnish and serve!
Once cooked, garnish with shallot rings, coriander leaves and soy sauce and serve immediately
