Step 1 - Preheat the oven and fry the garlic

  • Preheat oven to 180°C.

  • Mince garlic then pan-fry half the garlic until fragrant and set aside.

Step 2 - Prepare the prawns

  • Use scissors to remove legs from prawns.

  • Slice open each prawn length wise from the back side, leaving the belly and shell intact.

For a richer flavour and some crunch, leave the prawn heads on.
  • Flatten each prawn and lay it on a oven tray lined with baking paper.
To defrost frozen shrimp, move it from your freezer to your refrigerator 24 hours before you need it, or let the frozen bag sit under running water in the sink for about 15 minutes if you don’t have that much time.

Step 3 - Mixing in minced garlic into the stuffing

  • In a small bowl, combine the rest of the garlic with ½ tsp salt, 2 Tbsp white pepper, 1 Tbsp sugar and 2 Tbsp fish sauce.

Step 4 - Stuff and bake the prawns

  • Spread the garlic mixture evenly on each prawn and place dish in an oven on the upper shelf to cook at 180°C for 8-10 minutes, keeping a close eye on it.

Garnish and serve!

Once cooked, garnish with shallot rings, coriander leaves and soy sauce and serve immediately
