Ingredients

A seasoned, skewered and grilled meat served with a spicy peanut sauce. This dish is incredibly popular in the streets of Singapore, Malaysia and Indonesia!

Let's start cooking!

Chicken added into a bowl with marinade

Step 1 - Marinate chicken

  • In a bowl, mix shallots, minced garlic cloves, palm sugar, ¼ tsp ground black pepper, 2 Tbsp vegetable oil, 1 Tbsp fish sauce and 1 Tbsp light soy sauce until well combined.

  • Add chicken pieces and mix well until evenly coated.

  • Marinate in the refrigerator for at least 2 hours.

To save time and add flavour, you can marinate the chicken the night before.

Step 2 - Stir-fry garlic

  • In a pot on medium-high heat, heat up 2 Tbsp vegetable oil.

  • When oil is hot, stir-fry 1 minced garlic cloves for 10 seconds until fragrant.

Step 3 - Make peanut sauce

  • To the pot, add chicken broth, hoisin sauce, peanut butter, sweet chili sauce and 1 tsp light soy sauce.

  • Mix well and let it simmer on low heat for 6 to 8 minutes, until thickened.

  • Stir in sliced chili padi and peanuts.

  • Set aside.

Step 4 - Skewer chicken pieces

  • Skewer 3 to 4 pieces of chicken onto a bamboo skewer and set aside on a plate.

  • Repeat process with remaining chicken and skewers.

Step 5 - Grill chicken

  • Oil the grill.

  • Place chicken skewers on the grill for 3 minutes, flipping it over and cook for another 1 minute until chicken is cooked through.

If you do not have a grill, bake in the oven at 230°C for 10 minutes without flipping it over.

Plate and serve!

Place grilled chicken skewers on serving plate and over grilled pineapple slices. Serve hot with peanut sauce on the side.
