Ingredients

Also known as tea leaf eggs or cha ye dan (茶叶蛋). This delicious and savory marble egg can be commonly found in Chinese medicinal shops all around Asia!

Let's start cooking!

Cinnamon sticks and eggs in boiling water

Step 1 - Boil eggs

  • In a large pot filled with 2 cups water, add 5 eggs and 2 cinnamon sticks, then bring to a boil.

Step 2 - Crack egg shells

  • After boiling for 4 minutes, remove eggs and gently crack egg shells with the back of a spoon.
    For a more pronounced marbling effect, ensure that there are many small cracks in the shell for the stew to steep in
Dark soy sauce in pot of stew

Step 3 - Season stew

  • Add cracked eggs back into the pot, along with ¼ cup soy sauce, 2 Tbsp dark soy sauce, crushed garlic, ginger slices, cloves, star anise, 1 tea bag, ¼ cup Chinese wine and 20 g rock sugar, then cook on low heat for 2 hours.
    For darker coloring, add more dark soy sauce

Serve hot
