This Filipino recipe features vegetables and fried fish in a lemongrass soup, the perfect comfort food for a rainy day

Step 1 - Deep-fry fish
- In a pot on medium heat half filled with hot oil, add red snapper slices and fry until lightly golden. Set aside. Substitute red snapper with any other kind of fish with firm, white flesh
Step 2 - Boil soup
- In a pot on medium heat filled with boiling water, add lemongrass, zucchini, tomatoes, eggplant, lady’s finger and basil. Turn heat down to low and simmer for 15 minutes.
- Season to taste with fish sauce, then remove from heat.
Garnish and serve
Garnish with red snapper slices and serve hot.
