This fragrant Thai roast chicken, also known as Gai Yang Takhrai, is quick and hassle-free. Here’s how to do it at home

Step 1 - Preheat oven and marinate chicken

  • Preheat the oven to 220°C.
  • Blend lemongrass, coriander root, garlic, black peppercorn, kaffir lime, 2 Tbsp oyster sauce, 2 Tbsp soy sauce, 1 Tbsp vegetable oil, 2 Tbsp milk and 1 Tbsp palm sugar. Set aside
  • Lightly score the skin of the chicken, then marinate with the lemongrass paste for at least 1 hour or, for best results, overnight.
Scoring the meat makes it easier for the chicken to absorb the marinade. Same goes for duck, beef and other meats!

Step 2 - Roast and serve chicken

  • Roast chicken in the oven for first 30 minutes, covered with foil then 10 minutes without foil or until the skin is golden brown.
