Longan Tong Sui
A typical sweet Cantonese dessert, tong sui literally translates to sugar water.

Step 1 - Prepare ingredients
- Rinse longans and red dates, drain white fungus then pit gingko nuts. Set aside.
Step 2 - Simmer tong sui
- In a pot filled with 1 L water, add rock sugar and bring to a boil.
- Add longan, white fungus, red dates, and gingko nuts to the pot, then reduce heat to low, cover and simmer for 45 minutes.
Substitute white fungus with bird's nest if you have.The popularity of these sweet Cantonese desserts have resulted in dessert shops popping up around the world, particularly in Hong Kong and Taiwan.
