A popular favorite at ‘mamak stalls’ (or Indian-Muslim food stalls) across Southeast Asia, this version of the fried noodle recipe will elevate your everyday packet of instant noodles to a memorable meal!
Let's start cooking!
Step 1 - Cook instant noodles
- In a pot of boiling water, boil instant noodles for 2 minutes, then remove and drain.
Step 2 - Cook maggi goreng
- In a pan on medium heat, add 2 Tbsp vegetable oil. When hot, add garlic, shallots, carrots, chili and cabbages. Toss and mix well and stir-fry for 1 minute.
- Push everything to the side of the pan, then add in chicken and cook for 1 minute. Add drained noodles and stir-fry for 30 seconds.
You can replace chicken with seafood as well.
Step 3 - Add seasoning
- Add 1 Tbsp chili sauce, 1 Tbsp curry powder and kaffir lime leaf. Toss well, then remove from heat.
Garnish and serve!
Serve with cucumber slices and one fried egg.
