Masala Baked Chicken Rice
Take your regular baked chicken rice to the next level with aromatic Indian flavors for a delicious homecooked meal.

Step 1 - Marinate chicken
- Pre-heat oven to 180°C.
- Marinate the chicken with 2 tspground paprika,½ tsp turmeric powder, 2 tsp curry powder, 1 tsp garam masala, salt and pepper to taste.
Step 2 - Fry the spices and chicken
In a pan, heat some coconut oil and add cumin seeds, chopped onions, dried chili and curry leaves. Sauté until onions are slightly brown and fragrant.
Add the marinated chicken and cook until chicken is caramelised. Be sure to watch it so it doesn’t get burnt.
Step 3 - Prepare the curry
- Add the coconut milk and let the curry gently simmer. Add some water if mixture is too thick. Remove from the heat.
Step 4 - Bake the masala chicken rice
- In a greased baking dish, add the cooked rice and pour the chicken masala gravy ontop ofthe rice.
- Top the dish with grated cheese and bake for 15 minutes,or untilthe cheese is melted and bubbly.
