Miso Ginger Roast Beef

with Mushroom and Garlic Japanese Fried Rice

Savor this recipe of tender, roasted beef, flavored with miso over a bed of Japanese garlic fried rice. Savory and delicious!

Step 1 - Season and cook beef

  • Preheat oven to 180°C.

  • Rub oil on beef, and season with salt and black pepper.

    To make this a vegetarian dish, you can substitute beef for firm tofu.
  • In a pan on high heat, sear beef until brown.

    For medium-rare, place in the oven at 180°C for 5 to 7 minutes. Timing may vary depending on the thickness of the meat.

Step 2 - Make dressing


  • In a bowl, mix ginger, 6 Tbsp miso paste, 2 Tbsp mirin and ½ Tbsp rice vinegar. Set aside.
    Miso is a traditional Japanese seasoning produced by fermenting soybeans with salt and koji and sometimes rice, barley, or other ingredients.

Step 3 - Make fried rice

  • In a pan on medium-high heat, add 5 Tbsp vegetable oil and 1 Tbsp sesame oil. When hot, add garlic. Fry until fragrant.

  • In the same pan, add in shimeji mushrooms, shiitake mushrooms and rice.

    You may substitute fresh shitake mushroom with dried shiitake mushroom, soaked with hot water until soft then drained.
  • Add ¼ cup Japanese soy sauce, spring onions. Season with white pepper to taste and stir well.

Step 4 - Slice beef

  • Slice the cooked beef and serve on a bed of fried rice.

Plate and serve!
