Miso Ginger Roast Beef
with Mushroom and Garlic Japanese Fried Rice

Step 1 - Season and cook beef
Preheat oven to 180°C.
Rub oil on beef, and season with salt and black pepper.To make this a vegetarian dish, you can substitute beef for firm tofu.
In a pan on high heat, sear beef until brown.For medium-rare, place in the oven at 180°C for 5 to 7 minutes. Timing may vary depending on the thickness of the meat.
Step 2 - Make dressing
- In a bowl, mix ginger, 6 Tbsp miso paste, 2 Tbsp mirin and ½ Tbsp rice vinegar. Set aside. Miso is a traditional Japanese seasoning produced by fermenting soybeans with salt and koji and sometimes rice, barley, or other ingredients.
Step 3 - Make fried rice
In a pan on medium-high heat, add 5 Tbsp vegetable oil and 1 Tbsp sesame oil. When hot, add garlic. Fry until fragrant.
In the same pan, add in shimeji mushrooms, shiitake mushrooms and rice.You may substitute fresh shitake mushroom with dried shiitake mushroom, soaked with hot water until soft then drained.
Add ¼ cup Japanese soy sauce, spring onions. Season with white pepper to taste and stir well.
Step 4 - Slice beef
- Slice the cooked beef and serve on a bed of fried rice.
Plate and serve!
Drizzle the dressing over or on the side.
