One-Pan Lemon Baked Chicken
Both savory and tangy, this one-pan wonder of citrusy chicken should not be missed out on!

Step 1 - Prepare ingredients to bake
- Preheat oven to 180°C.
- On a baking tray or pan, place cherry tomatoes, smashed garlic, sliced lemon, rosemary and Holland potatoes. You can add other vegetables of your choice, like baby carrots and sweet potatoes
Step 2 - Season chicken and bake
Season chicken drumsticks with 1 tsp salt.To add flavor and save time, you may marinate the chicken the night before
Place chicken drumsticks onto the same baking tray
Drizzle everything with olive oil and mix evenly, ensuring that everything is well coated.
Generously brush butter on the chicken drumsticks.
Bake in oven for 25 minutes.
Step 3 - Make Sauce
- After baking, pour the juices and smashed garlic from the baking tray into a pan. Season to taste with salt and black pepper. Let it simmer on medium-low heat for 2 minutes.
- Remove pan from heat and add in ½ tsp unsalted butter. Mix well.
Garnish and serve!
Serve chicken, potatoes and tomatoes on serving plate. Drizzle sauce over chicken and garnish with basil leaves.
