Also known as otah, here’s an Indonesian classic fish cake!

Shallots added to blender to make bumbu

Step 1 - Blend bumbu (paste)

  • In a blender, add egg whites, halved shallots, 5 unminced garlic cloves, tapioca flour and coconut milk and blend this bumbu until smooth.

Step 2 - Knead the otak-otak paste and preheat oven

  • In a large mixing bowl, add the ground fish while slowly pouring and kneading in bumbu.
  • The paste will be wet.
  • Add some crushed ice in another larger bowl underneath your mixing bowl to keep the paste tight and cold.
  • Season with salt, pepper and sugar to taste then set aside.
  • Preheat oven to 200°C.

Folded banana leaves

Step 3 - Wrap otak-otak

  • Place banana leaves on a clean working surface.
  • Place 2 to 3 Tbsp of otak-otak paste neatly in the centre of the leaf.
  • Fold the 2 longer sides of the banana leaf to the centre, over the filling.
  • Fold and tuck the other 2 sides under the banana leaf.

Step 4 - Secure and bake otak-otak

  • Secure the folds with toothpicks on each side and place onto baking tray.
  • Repeat with remaining filling and banana leaves.
  • Bake otah-otah for 10 to 15 minutes, until the leaves have browned

Step 5 - Make peanut sauce

  • In a blender or mortar and pestle, combine ground peanuts, 1 Tbsp vinegar and 1 tsp minced garlic.
  • Season with salt, pepper and sugar to taste then set aside.

Blended red chili sauce

Step 6 - Make red chili sauce

  • In a blender or mortar and pestle, combine 1 tsp minced garlic, 2 Tbsp vinegar and 2 red chilies.
  • Season with salt, pepper and sugar to taste then set aside.
    Make a spicier option, blend dried chili with the fish paste to get a more traditional bright orange paste。

Blended tauco sauce

Step 7 - Make tauco sauce

  • In a blender or mortar and pestle, combine 3 Tbsp sweet tauco, 1 Tbsp vinegar, 1 Tbsp coconut sugar, calamansi juice, 1 tsp minced garlic, 1 red chili, and 1 chili padi and blend/grind.
  • Season with salt, pepper and sugar to taste then set aside.

Plate and serve!
